Host mushroom is the white Russula brevipes. The
parasite transforms the host’s gills and stipe and turns an unexceptional soft
and brittle mushroom into a fairly long-lasting solid brightly colored orange
to reddish gourmet delight. The flesh
inside is white. Sometimes has a fishy odor that
disappears with cooking.
Holds up well to sautéing. Best with garlic, onions and butter/olive
oil. Good on salads, pasta, meat, toast. Plentiful in la
