Cantharellus cibarius is a European mushroom. What we have MAY be Cantharellus enelensis (Thorn), a chanterelle found in Newfoundland and Labrador, previously called Cantharellus cibarius. Or it may be Cantharellus subolympicum - or another newly or yet to be described species of chanterelle. It is mycorrhizal with hardwoods. Appears in summer and autumn. Egg-yoke yellow cap surface. Fruity apricot-odor. Fruits between late summer and autumn. These are in the Hydnaceae family of the Cantharellales order.
Trim off any old edges, slice and sauté. Good with anything.
